We've had some mighty fine chili-making weather these past few days in Lubbock. In the spirit of the season, this thread has been created to discuss all things chili-related. Feel free to discuss anything that has to do with chili here: recipes, cookoffs, indigestion, whatever. :)
I discovered last year that I could make a pretty darn good bowl of chili by marinating the meat for a day or two prior to cooking. I just grab some Fiesta brand fajita seasoning, apply liberally to the meat, then toss it in the fridge. After a couple of days, it comes out nice and tasty. :D

My wife won't put any of the other fixin's in the mix until the meat has been cooking in the frying pan for at least 10 minutes WITH THE SEASONING THE WHOLE TIME. She says its a Texas thing, and the rest of the world are Da#&ed Yankees and wouldn't know chili if it bit them:rofl:. Oh and apparently REAL texas Chilli doesnt have beans in it?

It sounds like your wife is a wise woman indeed. Chili with beans is just stew. ;)

I love hot peppers. I may try and find an old copy of a book called Sweet Heat, which was about making desserts with hot peppers in them :)

I cook as much of the solid ingredients with the meat as I can, seasoning and all. Then just add the tomatoes and whatever liquid ingredients you use.

Yeah, beans do NOT get cooked into the chilli... I'm a NY redneck, the only difference is our accent :rofl:
If you want beans in chilli, spoon them out of the bowl next to the chilli pot and add them to what you put in your bowl.

Believe me, the city is 6 hours from me as the crow flies and that city is a tiny part of NY. I hunt my back yard :lol:

Around here the beans are mostly accepted. I tend to think of chili as largely improvisational - whatever I feel like at the time I'm making it. Sometimes works out better than others.

Last year, we had a chili cookoff up at work. The biggest debate we had in planning the whole thing was "do we allow chili with beans?" Our manager (a yankee) finally insisted that we do, so we let her have her way. Come judging time, though, none of the entries with beans even made it into the top 3 (out of 8). :lol:
By the way, dragonfighter, your wife sounds like a pretty awesome lady. She wouldn't happen to have any unmarried sisters, would she? :cool:

When those Yankee's actually have Texas chili, they will have that bite back feeling. :rofl:Until then.....it's made in NEW YORK CITY?!?!? :rofl:(I know you've seen the Pace Picante commercials).

Hmmm, I wasn't too satisfied with my last batch, hopefully next time will be more successful.
