Anyone here do home brewing or wine making?
If there was enough of us here it might be a nice little thing to add to the porch, beer wine recipes, techniques etc.
Just loaded up a 5 gal carboy with some goodies
recipe used:
approx 10lbs of peaches
2 cans of Welches White Grape juice
11.5 lbs of White sugar
1.0 lbs of light brown sugar.
SG came in at a whoppin 1.134!
I'm afraid this mixture has a wee bit too much sugar lol..
but if that yeast works its magic, then this mixture should come in at almost 16-17% alcohol (if my math is correct).

Back in university, the guys in my residence all got together and did a brew of beer in our residence's name. Tasted like 3 feet of old rusted copper pipe jammed down my gullet. :P
Now I'd much rather enjoy the product of someone much more experienced than I in this art.

I didn't think yeast could ferment to that kind of strength, I thought it died as soon as the alcohol concentration reached about 10%. Maybe they've developed a tougher strain of yeast.... it's been a while since I drank home-brewed anything.

Yeast has been able to ferment to higher strengths before...but it's also the fruit sugar (fructose) that ferments, so I may be wrong.
And extreme LOL to HisLeast. That's why Guiness is the way to go :D
I've wanted to try this before, but I've also always known that you have to try this a few times before you get a good tasting product. I wanna try to make my own product with someone who knows better.

Guiness is ok. I much prefer anything from the Unibroue brewery though. They might not have the pedigree of Guiness age, but they have the vigorous creativity of youth. They've got the full spectrum of beers from frilly-girly-foo-foo-cuddly-efervescent champaigne white beer to black-as-moonless night stout. They are craft beers of the highest callibre.
After a summer enjoying their flagbeer, "La Fin Du Monde", I've decided that the only thing a modern mass produced light beer is good for is washing the glass that is about to contain a real brew.

Actually home brews can get up to 20% with something called "turbo yeast", but here is a link for the most commonly used yeasts in wine making

As for What is fermenting, sugar is sugar, it doesnt matter its source. The fruit is just there for flavoring and color, yes it will add some more sugar to the mixture depending on the fruit.
You could make 18% alcohol from nothing more than
1 gal water
3.5 lbs granulated sugar
1 packet of yeast.
no color or flavor, would be great for a punch bowl kind of thing.

My dad makes a lot of wine, though typically uses the 28-day kits (concentrates) instead of actual grapes or other fruit. I've always enjoyed his wine, particularly the reds, as compared to many store-bought brand labels.
He has made wine from plums one time and ended up running around 15%.

We're not talking about getting drunk...just making alcoholic beverages. Alcohol itself is not bad.
If Jesus made wine a metaphor for His blood, then I am ok with it. Also, Jesus turned water into wine.

Gentlemen
I don't personally have a problem with drinking wine/beer or people who do. In fact there are obviously quite a few on this forum who do drink. But....we don't usually put it out there for others to see on this board. Reason being, there are many people who come here to this forum looking for help with their addiction from alcohol (and other things as well). We need to (IMHO) set an example by not glorifying drinking or the use of alcohol EVEN THOUGH we can handle it! Some people are not as strong to resist temptation as we are. Let God do His work and let us not cause our brother(s) to stumble. Just some food for thought.
I don't want to make enemies of anyone-just trying to be the voice of reason.
