I was watching a outdoor show and they featured some squirrel enchiladas.Yes,squirrel,small fury animals that hides in trees,eats acorns,houses,etc. Anyway,the woman,Phyillis Speer said you can use other game,such as rabbit,or chicken.And it's very easy to make. Take a medium size jar of salsa,add a 1/2 cup of heavy cream,2 cups of cubed cooked chicken,or other meat besides beef or vension. Mix salsa and cream together,add half to chicken.Put corn tortillas into a damp towel,and warm them up in microwave.Roll chicken and mix in tortillas,place them in baking spread coated with cooking spray.After tortillas are rolled,pour remaining mixture on chicken,put a medium size bag of chedder,colby,or favorite shredded cheese.Place in oven at 350 and bake until cheese is bubbly.
