    Wife made some good chicken enchiladas last night!

    I was watching a outdoor show and they featured some squirrel enchiladas.Yes,squirrel,small fury animals that hides in trees,eats acorns,houses,etc. Anyway,the woman,Phyillis Speer said you can use other game,such as rabbit,or chicken.And it's very easy to make. Take a medium size jar of salsa,add a 1/2 cup of heavy cream,2 cups of cubed cooked chicken,or other meat besides beef or vension. Mix salsa and cream together,add half to chicken.Put corn tortillas into a damp towel,and warm them up in microwave.Roll chicken and mix in tortillas,place them in baking spread coated with cooking spray.After tortillas are rolled,pour remaining mixture on chicken,put a medium size bag of chedder,colby,or favorite shredded cheese.Place in oven at 350 and bake until cheese is bubbly. Good stuff!

    Sounds good, I will have to give it a try one of these days.

    As for squirrel, they are pretty good eating, but only the bigger gray ones. My son bagged a few of them last year and we simply threw them on the grill and cooked them whole. They look pretty gruesome laying on the grill with no head, tail or skin, but good eats none the less.

    Hey,it's an outdoor show. The show has a lot of recipes,both game and domestic.I just thought it would be a good thing to try. I can't make that good sour cream sauce that they make in most resteraunts,but it's good just as well.

    Whoops,I forgot about the garlic.Add a whole roasted garlic,or a couple of tablespoons of minced garlic from a jar.It calls for 2 cups of boiled de-boned squirel,or chicken,whichever you prefer.

    We've got rabbits all over our neighborhood. Scarcely a day goes by I don't see 3 or 4. I've got in my head that some day I'll go over to the park next door and take one down with nothing but my own feet and hands.

    And then enchiladas will be had!

    I had some awesome green chile chicken enchiladas for lunch yesterday. My sinuses had been a little congested earlier, but the enchiladas solved that little problem in a hurry (along with some jalepeno pinto beans)!

    With jalepeno pinto beans,there's another thing that won't be congested.

    The next time I "accidently" hit a squirrel I'll take it to The RoadKill Cafe and have them make me some tacos ,

    Did you guys MEAN to post this on the Porch where we girls don't have to read it, or smack dab in the middle of Christian Fellowship where I've read it and am now tempted to be ill?

    Squirrel enchiladas? Ewwww....

    Ok, look... I don't know about where you folks are, but the squirrels around here are often mangy, bug-infested, flea-bitten varmints (who I still feed peanuts to).... but I would NOT want that on my grill OR in my oven or anywhere inside my home! Bleh!

    That's why you put 'em on the grill first. Cooking 'em all the way through should get rid of most of the bacteria. What's left will just help give your immune system a good workout. You don't want those white blood cells getting lazy now, do you?

    The recipe came from a girl,Phyllis Speer,who is a member of Arkansas Fish & Game.As I said,and she did also,that you can subistute squirel for rabbit or chicken as my wife did.You'd be surprised at some things you'd like if you didn't know what it is.

    I've been informed today by a family member that "squirrel stew" makes for good eating, and that I don't know the meaning of 'hunger' -- then again, the man who told me that doesn't know it either.

    I HAVE had deer stew, and a pepperette stick that I later found out was actually from a grizzly bear..... but if I have some nice, normal chicken, I'll take that over the squirrel or game any day.

    I made the mistake of telling a younger family member about the deer stew when we celebrated Thanksgiving this year. She just nodded, and then whispered something to her older brother, who burst out laughing and said "No, it DIDN'T have a red nose, she'd NEVER eat Rudolph, don't worry!" and I had to assure her that in fact its nose was probably very ordinary.
