I don't see a problem with panfrying any fish. Spice up the oil you use as well as all the spice you put on the fish prior to frying. The skin will come off or be very easy to remove once the meat begins to cook. If the meat is thick maybe with a sharp knife you can affort to cut the skin off so all the meat can be spiced. I usually don't eat the skin at all.You see my dear friend, I am a boffin on post # 2

Sounds perfectly acceptable to me... but then I am not much of an epicurean... when shall I be there?
