I would have to say both. It depends on what I am eating, or planing on eating. I do enjoy Eggs Benedict, but, you are correct, northerners cannot make cornbread properly.

respectfully disagree....i prefer my biscuits w/ butter and Georgia cane syrup..i've already gotten my 21-month old hooked on these.
have you ever heard of homemade biscuits referred to as 'catheads'?
that's what i grew up hearing them called but i've never been sure if it's just a Georgia term...
a cathead is a made-from-scratch biscuit that's so large it's the size of a cat's head. legend has it that my grandfather proposed to my grandmother by asking her 'would you like to spend the rest of your life making these catheads for me?" lol.

As for fried foods,that's just a Southern tradtion.The East was established and heavy populated (for the times). Eating houses were fancy due to a lot of European culture,likewise with the families.Southerners were mostly poor folks who had to live off the land,made their own lards out of animal fats and the like. Now,if you want a treat,try fried green tomatos,and while you're at it,fried squash.If you really want to experince these tasty food treats,don't try them at a resturaunt.All you need is sliced green tomatos,or squash,or both,vegatable oil,flour,a cast iron skillet,and a little bit of bacon grease to make it authentic. You will love it,and it's addicting.![]()
'Catheads' are still the name of the biscuits that are that size here in 'bama. I was raised amongst the sugar cane in Louisiana, but couldn't acquire the taste of the syrup. It was the only type provided in our home. Too strong tasting for me.
The heat of the summer sun in the South made people preserve food with a lot of salt and sugar. I agree that the ham today doesn't make a good red eye gravy (the red eye being coffee poured in it).

Katman, I'm looking at some summer squash right now that are going to be fried in a cast iron skillet. Yum yum! My tomatoes aren't quite big enough for fried green ones, yet, but they are getting there.
