Well, because He didn't say that.
And also, bread and wine are part of the Passover seder, it was the 'shadow' cast by our Master. The disciples would have know immediately what He was talking about.

Here's a little Jewish passover prayer for ya -

“Behold, this is the bread of affliction which our fathers ate in the land of Egypt. Let all who are hungry come and eat. Let all who are in want come and celebrate the Passover with us. May it be God’s will to redeem us from all trouble and from all servitude. Next year at this season may the whole house of Israel be free.”
Unhappy is he who mistakes the branch for the tree, the shadow for the substance.

Again, you are assuming there was nothing else at the party, AND you are assuming that the WINE was alcoholic. Wine in the Bible can mean BOTH fruit of the vine (grape juice) and fermented wine. I am led to believe that Christ gave them grape juice. Christ was the SPOTLESS lamb of God, following much the same order of a Nazarite. Fermentation makes something ROTTEN and can be bad for the blood and destroys (howbeit at a slow rate) brain cells, and is BAD for the liver.
I think not all fermented stuffs are bad you our health, according to this article http://articles.mercola.com/sites/ar...interview.aspx fermented foods have a lot benefits.

What about 1 timothy 5:23 are we to suppose that that was just grape juice? I don't think so, it's the fermentation process that destroys bacteria.
