I'm hoping you ladies can help me with a yummy recipe for dried pinto beans. I have a LOT that I have to cook up soon (expiring). Last time I made them, they were kind of bland.

250 g dry Pinto beans (2 Cups)
50 ml sugar ( 4T)
100 mlvinegar (8T)
10 ml salt (2t)
3 ml black pepper(1/2t)
50 ml butter (4T)
Wash the beans and soak overnight.
Drain the beans and cover with fresh water and and boil until they are soft, and nearly boiled dry
Add the other ingredients ... you may mash some of the beans to make a thicker sauce...
Keeps well in sterilized jars

Also, you can cook big pots of Pinto beans, season with good old bacon or bacon grease, and then when they are done and cooled...put them in containers and freeze them to warm up later.
If you can't eat them all now, just about anything that is cooked can be frozen. (I say just about anything because there are a few things that are not good frozen...like Fried Green tomatoes.)

(Every time we speak of the Lord, or even THINK of him--its written down in a book of remembrance!)
Soak overnight. Rinse. Put a bunch in a slow cooker. Cover with water. Add onions, garlic. Cook until... cooked. Drain, reserving liquid. Mash or blend up. Add salt, chili powder and WHITE pepper. You'll need a fair amount of salt. Add some liquid back in till desired consistency. (You'll want to add more liquid than you think is necessary, as this dries out when being reheated. So the more runny these beans are to start out with, the better off you'll be a few days later.) This recipe makes very yummy refried beans. Freezes well. Can be used to make burritos, nachos, 7-layer dip, etc. I mke it up in alarge slow cooker and have a lot to feed people with and still some left over to freeze.

Beans and rice is also good. I'd cook them separately then mix them together. Some bacon grease for flavor is a good idea, and some herbs, such as oregano. Salt and pepper, maybe some chili powder. Yummy.

Ok, this Weight Watchers recipe is very, very good. My picky, non-WW husband LOVES it, calls them perfect. They freeze well, too. It calls for kidney beans, but I used black and pinto, with wonderful results... http://www.weightwatchers.com/food/r...ecipeid=137361

1 16-oz bag pinto beans
1 onion
4 cloves garlic
1-2 tbsp chili powder (to taste)
2-3 tsp white pepper
salt has to be to taste, but at least a tbsp
