Well "God-fearing" is basically 'respect', 'reverence', 'piety', 'awe toward a supreme power', etc..

Luke said "God-fearing" for the same reason it is expressed "Prayed to God regularly". To express I guess the "Godliness" or "Goodness" of the centurion Cornelius.
Cornelius and his Family were God-Fearing people.
