What is the best type of translation for one to read who is moderately new to the faith yet is accurate and very easy to understand?

ESV - English Standard Version

I find the NIV (New International Version) really easy for simply reading, and it's pretty reasonably accurate. It seems to flow better when I want to sit down and read huge chunks at a time, so it tends to be my translation of choice for that purpose. I've also heard good things about the ESV as -Seeking- mentioned if I'm not mixing up my translations, and my mom's claimed that it's a bit more accurate, though either will work just fine.

I tend to prefer the NASB (New American Standard Bible) for more serious study as it's a bit more word-for-word accurate, and I've never thought it was particularly difficult to understand.

I recommend the ESV (http://www.biblestudytools.com/esv/)or NIV (http://www.biblestudytools.com/niv/). I like the Life Application Study Bibles too. Makes the Bible reading a little more applicable especially in some Old Testament books.
