"Jews do not casually write any Name of God. This practice does not come from the commandment not to take the Lord's Name in vain, as many suppose. In Jewish thought, that commandment refers solely to oath-taking, and is a prohibition against swearing by God's Name falsely or frivolously (the word normally translated as "in vain" literally means "for falsehood").
Judaism does not prohibit writing the Name of God per se; it prohibits only erasing or defacing a Name of God. However, observant Jews avoid writing any Name of God casually because of the risk that the written Name might later be defaced, obliterated or destroyed accidentally or by one who does not know better.
The commandment not to erase or deface the name of God comes from Deut. 12:3. In that passage, the people are commanded that when they take over the promised land, they should destroy all things related to the idolatrous religions of that region, and should utterly destroy the names of the local deities. Immediately afterwards, we are commanded not to do the same to our God. From this, the rabbis inferred that we are commanded not to destroy any holy thing, and not to erase or deface a Name of God. '
Those who seek God with all their heart will find Him and be given sight. Those who seek their own agenda will remain blind.

Some do if out of respect for a person who has a background in Hebrew tradition. If you wanted to share Christ with a Jew who might be seeking, it could be helpful to respect their tradition..... pretty cool show of love in my book.

I know the "reason", but what I don't understand is that when they type G-d, they mean God, so what is the difference? Does G-d not thus become a "name for God"? If this were the case, then they couldn't write it either, and the cycle would continue with the only logical conclusion being that you could never write anything indicating God, which makes no sense at all.

I agree. The term "God" isn't his name and therefore, there would be no reason to remove the middle letter. And besides we aren't writing Hebrew characters anyway, so even if we attempted to spell out the full name of God we would need to use Hebrew characters. I typically write the name of God as "Yahweh" according to custom, which is actually a guess since no one knows the actual vowels that go with YHWH. As I understand it, the Hebrew Bible contains the name of God written with the consonants of "Yahweh", but the vowel points of "Adoni".
In other words, anyone who wishes to respect the name of God in print doesn't need to worry about it since know one actually knows the actual name anymore.
From what I've heard, it's to avoid the word "God" being erased.
The words God, Jesus, and Holy Spirit have been written and erased on chalk boards, and white boards all over the world in Bible College and Sunday School classes for hundreds of years. Have they not? We write and then erase the name God not to trample it, but to get on to the next teaching point. God knows we are on a message board or in a class room or writing a letter.
I've noticed some will write G_D, or G-d instead of GOD. Why??
I haven't figured this one out yet.
I will assume the same reason that I would type the word he or him in the middle of a sentence with a capitol H when the word refers to God.
It's the way I show God respect when I am writing something about Him. For others, the Word God is spelled G_d because this is the way they show their respect.
